Right above (or below) the maintenance values, it lists the resources mined each turn. This is on the main display for the vehicle (the one that shows up when you select it).

Confirmed. Clicking on the sat stack gives a list of sats. Right clicking on the individual sats gives the design. Remote mining amount just isn't displayed on sats. But the income is reported in the Empire screen.

I just had an idea. How about a new technology between remote mining and creating a planet. You build the facility or component over time and then when it is activated the whole planet (in practice probably a moon) is detroyed and its resources added to your total. Of course you would need to build lots of storage facilities first. Maybe the amount of resources gained would depend on planet size and value.
