The way to go, if you want more real estate, is to build sphereworlds. research stelar-manipulation to the top of the tree.

The logic for building it around a star is not scientific, its a limit of the game engine. the game was designed for ringworlds and sphereworlds to be the only kinds of created planets. The mod designers wanted something smaller and easier to build, so they created the Stelar Moon. Due to game limitations, it has to be built in the same sector as a star, and it will replace the star when built.

note, this is a ultimate defense against stars that have become unstable, or that may come under attack.

also note your other options for maximizing real-estate:

- make all planets breathable by (a) importing colonists that breathe the atmosphere (b) placing an atmospheric converter on the planet (c) destroying and recreating the planet until you get what you want

- make all asteroids into planets

- destroy all blackholes and nebulae, and create suns in those systems

- build sphereworlds around all your suns

Great tips... Some I've used... but what happens to the star? Will solar panels still work?

nope. the star is replaced by whatever you create.

Well, this doesnt have any negative impact on the rest of the system does it, other than solar panels not working?

You will not be able to create new planets from asteroids, since that requires a star.

Note that other solar abilities, such as crystallince solar resource facilities, will also stop working.

Of course, if you are playing a simultaneous game, and have more than 1 star creator, you can create more than 1 star in a system. At least you use to be able to. Haven't tried it in Deluxe.

Make sure all star creators are in the sector you want stars (any movement will screw this up), give them all the Create Star order. Upon processing the turn, all of them should create stars at the same time.

Like I said, this use to work in older versions but I haven't tried it in Deluxe.

You do not need to do anything special to build multiple RW/SW out of stars in a binary+ system; nothing stops you from building one out of the second star in any game mode.
