Well, let's take your word, but please give more precise questions...
First it's not even remotely possible to lose "in a couple of turns", it takes at least 10 turns to have an enemy army storm your capitol.
Then read the demo tutorial if you've lost the manual, go to the wiki page, look at the links to have other Dom3 or Dom2 advice (90% of it still applies, except nation specifics), and try again http://forum.shrapnelgames.com/images/smilies/wink.gif

I had this same trouble with dominions 2, then i discovered Province defence and everything was swell.

Make sure you are using PD. Make sure you build forts in stratigic locations with high resources. MAke sure you have mages and preists escort your armies.

It's a bit different if somebody has been around for a long time and contributed a lot and then for some reason lost it (e.g. a fire or kids accidentally destroying things or moving). Ive lost several manuals ect containing CD keys or other important things.

Losing stuff is easy. I don't have my manual at the moment, forgot to take it back with me the last time I visited my mother. I just hope I'll find it the next time I'm there.

It seems like you can't build forts in every region/province on the map. Do you have to build or research something before you can do that?

you can build a fort anywhere other than underwater(and even there if your a water nation) unless you lack gold afaik.

A fort can be created from a spell underwater.
