You think you're kidding. But that's one of the two most important reasons. Many
good players take heavy misfortune. A bad event in one of the first turns can
often be seen on the income graph, and paints a big bullseye on the unlucky
nation. Much in the same manner, a lot can be learned about your pretender from
the research graph. When there is no research for the first turn, one can deduce
a sleeping pretender, and decide to attack.

The second reason is that at some point, everyone decides to attack the leader.
The graphs are what people use to decide who the leader is, more often than not.
Graphs off often leads to a more challenging game and really interesting diplomacy.

Yes, I was only half-kidding. I've recently played in a graphs off game, and it was very challenging to try and decide who was actually powerful. I like it... although, in a large game, I tend to want the graphs on. In a game of this size, graphs off should be fine.

If there is a choice I would prefer graphs off as well. I think it is more realistic along with the reasons stated above by the others.

It's funny, out of all the graphs I actually think that research tell your opponent the most about what sort of game plan you have. Though really it's a combination of exact information in several areas combined that can give you a good idea of your opponent's strategy, position, and abilities without ever sending a single scout. It's completely unrealistic.
