Death/fire spells and items are also very useful against undead but overkill really...

The legions rely on Lasting longer than the enemy, so any regenerating forces (blessed niefel giants or hydras) would also work well i think, against the low damage dealing undead. Anything with defence or protection over 20 is also pretty imune to most undead.
