You might need more than ethereal and/or high defence, you need to do enough damage back to the elemental or eventually your bodyguards will go down. A bodyguard of units like sea trolls would probably work: they've got high HP, are big enough to not take too much damage from the trample, regenerate, and can hit it back hard so it will quickly diminish to a smaller form.
