I don't think there were probably enough Bajoran ships ever shown to make a set. You'd probably need to have take a little creative license. But it could be a beutiful set if someone was interested in making one. Lots of graceful looking ships. The ones they did show were pretty cool looking. Lot's pointy spires, sweeping curves, and panels reminicent of solar sails. I am thinking something like the stock Xiati set, but with softer curves instead of the sharp angles, and a more reddish-brown coloration rather then the dark xiati colors.

At least that's my idea of what it would look like.

Try the DS9 set and go from there.
