Can you mod items?
 

I don't see any file called "Items.txt" anywhere, at least not in the demo... surely there's got to be some way to create new items (scrolls, potions, armor, etc.)

Yes, you can mod items.

I don't know about the demo, but the item file can be found as main_itemclasses.txt in the tiles folder for each module.
