Checked the FAQ above and don`t see how to use Spys, if you move them into a Province how can you see the enemies Army composition ( or can you ) ?

Stealthy units(unless specificaly ordered or if they command non-sneaky units) automaticaly sneak to enemy territories. Sneaking units can be caugth by patrolling.

Select the province where spy is and then press 'i'.
You will see some info but not much.

<font size="2" face="sans-serif, arial, verdana">Actually scouts will let you see the enemy army composition. Use the "i" or the "information" button to see it.

Spys let you see more such as who the commanders are, some of the worth of the province as far as gold and resources (without having to push your dominion there), and they have a mission option to raise the unrest in a province which can be handy.
