When are we likely to see the mod pack customized for 1.27b?

The new Version should be out sometime tomorrow.

Also, two days ago Mephisto has posted a Version of 1.50 Mod Pack that is compatible with the 1.27 patch and uses a new 'mod directory' structure. You can get it in the mod section.

Well, the changes will be listed in the Version history for each race included. Don't expect too much changes this time, though, since we are making this one just to be compatible with the new 1.27 patch. The changes made mostly include fixes needed for our races to use new features introduced with the Last patch (like cloaking).
