What does this actually mean? Do you get a message about when the system will explode, or does it just explode randomly?

Oh the whole thing is, "Star has an unstable core and is prone to eurptions".

That ability doesn't actually do anything. If an event occurs that makes a star go nova, it can affect any star, and you will get a warning that it will occur in 3 years (30 turns).
