Movements -> defend & patrols orders
Let's say I have a castle in Prov1 & Army2 in another province. Army2 moves to Prov1. At the same time, an ennemy attacks Prov1. Will Army2 use a 'defend castle' order or a 'patrol' order ?

Defend Castle by default.

Yes, there is also "Move And Patrol" order in unit menu.

You need to set the army to move to the castle. Then change its orders from the menu, there is now a move & patrol order available.
