Sun sword, sun armor, etc
 

I was wondering about the chances of the creature spawning that has these along with their stats and such. I checked in the db_315 but while the items themselves have a brief mention there is no unit under 'allunits' which has them.

What creature is this? What are the chances for him appearing? Is there any outside indication that they are there? Is there a place I could see his full stat block?

Solaris, an independent knight. The game gives him the items when he's generated at game start, so they probably aren't built into his monster data. I think he's more likely to appear with a higher value for Indy Strength during game setup. You might be able to find him by scout/spy reports of unit types on indy provinces.

Solaris is a paladin, the MA Marignon commander. He gets the items assigned at game generation if he appears.
