Not a canon Star Trek race, but the Hydrans from SFB/SFC are big on fighters... they were weird-looking critters that looked like the Silicoids from MOO2 only with 3 arms and 3 legs... can't recall exactly what their ships look like but I know they were blue and purple and they *might* have resembled Dominion ships...
edit: oh, and for the general Category, just about any race from Star Wars
