I have not played around with the happiness file itself but my understanding is that the happiness points are points and not percentages. In your example you will get 8 x 100 anger points for 8 war declarations. However this is cut at 200 points, the maximum negative mood changing value. The question is if all the positive and negative values are first calculated and then applied (and possibly cut) or if all the values for either side are calculated, cut, compared to each other and then applied.
Remember for testing this that a Homeworld will never riot so you have at least one colony devoid of any troops to make any useful observations.
