The problem is, too unbalancing mods don't get hosted very much...
Your best bet is to get the modding document (I believe it's in the doc/ directory, if you patched to 2.08), read it, and download various mods from Illwinter's site. Then you can start changing the stats of your own units in a mod - like, give increased magic, or whatever, to your national units.
But, mostly, it will spoil most of the fun. You can have an easier game by using game settings that make life harder for the AI (like, put them on easy, but with high independent settings like 7-8; you will have to be careful what you attack, but the AI will take a looong time expanding, and fighting independents is much easier).
Or, you can play Ashen Empire Ermor; the AI is notoriously bad at dealing with it. You get lots of "free" undead (take all negative scales except for Luck and Magic, and pump all these points into a massive dominion and a strong Pretender - don't forget the Death magic!). Keep Marignon out of the game, as they have too good priests. The game should be much easier (but, IMHO, rather boring).
