A whole line of CRPG's that define the term 'groundbreaking'.
www.elderscrolls.com for the latest, Oblivion, which will feature a map editer capable of semi-randomly generating realistic terrain (Check the screenshots), NPC's with a daily schedule; if an NPC is told to eat something in the schedule, they may take actions as varied as buying some food from a store, go out and hunt some grub or pick your or another NPC's pocket and possibly be arrested by the guards. Which could present difficulties for you, if you need them for a quest. And, you can ride horses and therefore probably engage in mounted combat. All of this in a creative and original world with tons of detail.
