1. Yes. I've done that recently. The inverse can't be done, however. If you're sieging a castle, you can't assassinate the defender- at least by mundane means.
2. I can't tell for sure, but I believe they don't. I believe I've prevented troop movement by assassination, I suppose you could prevent sieges as well.
3. Barring specials such as gluttonous demons, or no need to eat undead, food is related to size. Check the manual for the specifics. But I believe a cavalryman takes two units of food, while infantry 1. Click on HP for size information.
4. No. Enough booze prevents starvation. I wouldn't say it would be too healthy, or that your sentries would be dependable- but fortunately drunkenness isn't modeled.
5. Yes... I think - but I haven't really kept a close eye on the situation. To test, just start a game near Jotunheim as Agartha. Wait until they siege your castle. It should happen soon enough.

What can the besiegers do? I don't know if patrol works- it might. But they can use crappy commanders to lead smaller brigades of besiegers- assassination is randomly targeted.
