K - should have realized that that was what the Dominions3 folder in my home directory was for.
Needless to say - the game still crashes when I put the maps in the maps folder of my home...

Installing Maps on the Mac version
Running Dominions 3 on my MacBook Pro... OS X 10.5...
I tried putting some new map files into the appropriate folder of the Dominions3 package
Right click the Dominions3 package, choose View...
