What are your favorite Single Player settings?
I finally got the full game. Unfortunately,
my favorite strategy in the demo - all AI on,
all of them on impossible - does not work too
well with the maps supplied with the full game,
for various reasons - too few provinces, some
nations cannot be AI controlled, no underwater
nations, etc...
So what are your favorite settings for single
player? Remember, I am not a veteran by any
means... but I would not mind trying hard stuff
as well.

Err... sounds like you have been selecting those starred scenarios rather than the maps. IIRC, only those starred scenarios restrict nations choices (e.g. non underwater nation for Power of Eye).
If you want all AIs, perhaps use the Orania Map, it is fairly big. Or download the World map, that has a lot of provinces too. Try different Independent Strength setting, low makes indies easy to conqueror, but high ones can make some truly interesting games as you struggle not just against other nations, but all those knights in indy provinces.
Just some thoughts.

I prefer to use 5-6 enemies on Aran (difficulty setting is whatever you like) Indy strength at 6, rare events and research is very difficult.
It usually gets hard to manage all of your provinces after you've taken 3/4 of the map, but all the smaller maps feel crowded (at least with 6 opponents they do).

I like 8 other races set to normal or above. I set indepedents to 9, hero list set to 15, magic research as hard, and victory point.
I set to 40 victory points, 20 singles, 15 doubles and 10 triples.

I haven't played around much with exotic settings, since a lot of my play is in MP games. Once I realized that most of them seem to have independent strength 5-9, I quit playing other values.
Similarly, while I actually prefer magic research to be more difficult, I almost never set that for my solo games, because the strategies and habits I'd acquire wouldn't translate well to multiplayer.
The number of opponents - varies according to the size of the map I want to play, and whether I'm aiming for a big period of expansion and research, or if I want an early slugfest.
Independent sites - usually between 50 and 65; fewer and there isn't enough goodies to celebrate finding.
Hall of Fame, 15; Renaming most definately on, both for a shred of RPing flavor, and also because I can't stand having 4 commanders all with the same name.

The problem with VC in solo play is, the AI doesn't seem to play for the VC. It's quite possible to win a VC game while you're objectively losing the wars, because the AI doesn't specially care about these crowned provinces. But "normal victory" games vs the AI tend to drag horribly long...

About VP in solo mode : what I do now is to give only VPs for capitol, with victory when a player get more than 50% VPs.
So AI really defend and attack them, and it also permits a shorter game than "standard", conquer-the-world, conditions.
Else my current preferred setting in on Cradle with 9-10 AIs and Indies to 8.

Good idea about the VPs.
Also, agreed - Cradle is a very nice map, where geography does matter. I don't know how it works for MP, but for solo it's quite fun.

One thing about the victory points though - you the player can see them, whereever they are on the map. (I kinda think it might be nice if you had to scout out the locations myself) And since the AI doesn't pay attention to VPs, the human player knows where the capitols are and can plan accordingly - suspect the AIs don't reciprocate.
