You could edit the events.txt file that contains the event that causes a sun to go nova. All you have to do is change the following line:

Time Till Completion := 30

to something like

Time Till Completion := 100

and change the message displayed for the event to show that it will happen in 10 years instead of 3. That will give you enough time to build a sphereworld or ringworld around the star.
