Wish never boosts Holy/Unholy, only magic ranks. This is regardless of whether the unit wishing is a pretender, a holy or unholy priest, a prophet, etc. There is no priestly power wish. Ah, that's what I thought. Hmm... are there any way of boosting Holy/Unholy short of making a prophet, or communion/sabbeth? Don't recall an item that does this...
And for wishing "Power", I know it increases the stats of caster, but do you know just much the increase is in each stats (e.g. 20% hp increase, +1 prot, or whatever they are)?

HP +50, STR +20, Atk/Def/Prec +10.
These are flat increases, not percentages.

Both boost Priestly power by 1, respectively.
Temp boosts can of course be gotten via Crystal Shield or Communions.

These are all temporary/item boosts, though, and Crystal Shield/Communion works only in combats. None of these permanently raise holy/unholy, and Sword of Justice/Injustice are artifact-grade items which you can only have one of.

that is strange in single player when i wish for power for a master smith then end up with 90-110 hps. Smiths only start with 10 hps (and we are not talking about a prophet) and its not an exact amount for every one either.

Is "Gift of Health" involved? Gift of Health causes a unit to gain MORE hitpoints, which could, potentially, result in a 110 HP Power-wished master smith.

ah gift of health is one of my favorite spells so that is probally it(didn't realise it could add 50 hit points though)
