se.net blew up a few days ago, and is in the process of rebuilding. With many gigs of stuff to restore, it will be coming back a bit at a time.

The resources are not actually mentioned anywere except in descriptions.
Thus, simply by editing the facilities and other files, you can rename them all however you like.
To change the resource icons, look in Pictures\Game\General.BMP

Do what SJ said and change text description references from "minerals" to something else. Just be very, very careful not to change the Cost entries, as SE4 requires them to be labeled as they are (Cost Minerals := ###).
