Default Multiplayer moods?

OK, everyone knows about the mood readouts on the politics screen. Normally, I've only seen the AI change- not human players, they always stay at moderate. But in Spiralus, the human player's moods changed as well. How do you do that?

That seems to happen to me when I miss a turn and the AI plays. I don't know of anyway to set it (or reset when the AI messes it up).

Is it possible that it happened when the AI played someone's turn?

Seeing human player empires change their stance is pretty rare in my experience. The only times I have seen it change was when I colonize a planet in their home system. Needless to say it moved the value down.

I think the reason for this is the relative non-use of the "demanding" and "pleading" options for diplomatic Messages. Humans tend to let the text do the talking instead of clicking one of the options. I think these are 'misnamed' anyway. Who would use 'pleading' for anything but an obsequious beg for mercy to keep from being annihilated by a huge enemy? I think it might be more accurate to call this one 'friendly'. But anyway, try sending Messages to AIs using one or the other of those options and then looking at the AI screens. You'll see your empire's perceived "attitude" change as more Messages with one or the other are received by the AI minister.
