The game's music 
Dominion 3's music is actually really good, especially since there is more than one track (Yep, looking at you dom2), and I just haven't reached the point when I just have to replace it with something else.
Also, I don't have anything thematic to replace it with, so I'd just end up playing with AC/DC in the background O_o

If I were to show my age Id mention Yes and Uriah Heep. Particularly Uriah Heep has pieces which totally fit the RPG side of this game.

Early Age:
The Conan the Barbarian Soundtrack. (Rest in peace, Basil Poledouris  )
Middle Age: Rock music. (I don't play too much Middle Age...feels too much like D2!)
Late Age: Nine Inch Nails.

Don't think I've ever listened to a game's music for more than 20 minutes or so, and have uninstalled / thrown away (console) games that didn't let me disable the music.

As for AI the most effective work around to this problem so far is to simply use an American instead, they tend to put up a bit more of a fight than your average Artificial Idiot.

To anyone playing R'lyeh or another spooky enough nation, I recommend
Octane soundtrack by Orbital
mostly great soundtrack from bad thriller.

You can't go wrong with Dead Can Dance,you get enough material for several nations.
Amateur celtic flavored bands, like polish Open Folk, Czech Dun An Doras, Tredrez Trio, Bal Kuzest, Ula Kapała.
Other folk bands like Stara Lipa.
Bauhaus. 'Bela Lugosi is dead', 'All we ever wanted was everything', 'In the night', 'King Volcano', 'The three shadows' part 1 and 2... + some XIII Stoleti pieces would make great Ulm:Black Forest soundtrack.

Last.fm is great if you're interested in discovering more music you like. And don't mind being pretty much glued to your computer. It lets you choose your own station, skip and ban tracks without limitations, tag them as 'loved' etc. Listen to your musical neighbors' music etc.
If you use Linux, I recommend using older client and OSS, otherwise it's very hard to run.

Therion and folkearth, mostly therion since they have so many fitting songs. The album secret of the runes fits very well when playing vanheim and jotunheim and the crowning of atlantis works well when playing certain underwater nations.
