The most flexible priests are demons (not Yomi Demon Priests, actual demons). They can choose to either preach or reanimate, depending on what you need them to do that month.

That's actually the point. When you revive a fallen priest, he gets something for something: he loses the ability to preach and gets the ability to reanimate.
And when you play Lanka or MA Ermoryou get nothing for something. You just lose the ability to preach...

Lanka and MA Ermor priests (non-undead) get everything for nothing. They all can choose to either preach or reanimate, even a scout if you make him your prophet.
Edit: PS Sorry for slightly hijacking your discussion, I know you want someone to tell you the reason why undead can't preach. I don't know why.

I said about reviving the fallen prophet who thus loses his ability to preach and gets nothing for that.

I think the answer is "Undead can't preach." perhaps followed by "If you didn't want him to lose his preaching ability, perhaps you should not have allowed it to die." or maybe "He loses his ability to preach, and gets his life back for it." 
EDIT: Also, didn't he get the ability to reanimate dead? Undead priests should be able to do just that.

Ah, I finally understand! You were Lanka or Ermor, and had a priest who could both reanimate the dead, and preach too.
Then your priest died. You reanimated his hideous rotten corpse, and he could not preach anymore. Of course, he could still reanimate.
