Ok, go to your executable and click on the gear looking icon. Choose to show contents or resources. That will open another window with the contents of the dominions files, including a directory called maps.

Additional question: there is two types of files, tga's and map's, what do they stand for? Do I need both types of files for single map to work?
How about mods? There is folder for those but how do I proceed, for example with Rohan mod shared here in the forums, forward? I tried to copy Rohan mod files there but could not figure out if something happened (read: donno what to do)?

tga is the image. Map is the info.
You can place any tga and rename it but map will not match the province locations so you need the image that matchs.
Map file search for the tga file with the same name.
You need to copy the mod files into the mods folder. Some have folders with info that fits inside mods folder.
to activate them go to the game´s main menu, preferences, mod preferences where you activate and deactivate mods. some mods have icons that are visible on the main menu when active, but you know for sure wich are active in mod preferences.

Does anyone else find it weird that on Mac OS, maps go into Dominions3.app/Contents/Resources/maps, while the mods go into ~/dominions3/mods? It would be nice if all add-ons went into ~/dominions3 or if you had an in-game option for changing the default locations.

Actually, you can put maps in ~/dominions3/maps. You may have to create the maps folder. They will coexist nicely with the built-in maps.
