There aren't commands for all abilities. Petrify might be one of them. Search the mod manual for "gorgon", "medusa" and "aegis", one of those would be listed as an example of the ability in-game.
If there's no modding command, it can sometimes be circumvented by using #copystats command to copy a unit that has the ability. However, the Pangaea pretender is the only creature that I remember having Petrify, and it flies, and you can't remove the flying without removing petrify.
Petrify is very strong ability, though, so you could consider replacing it with something else. Perhaps a "Petrifying Gaze" special attack that causes paralyzation?
