I'm as newbie as anyone can be. The first race I tried were Ermor playing on the default theme whatever that is. I was producing Undeads like crazy and I stomped everyone in sight until I met Jotunheim. Jotuns troops ripped my large undead armies apart with very few men. I felt like Saddam trying to defend against USA in the Gulf wars.  Needless to say I lost that game as troops were needed from every part of my empire and all my other neighbours just crashed in on the party slaughtering my armies everywhere.

Ermor is intimidating. As soon as you see Ermor start building temples and recruiting priests. The huge armys of ermor can dissapear in large batches if you bring 6-12 priests along.
Also start making food items right away. If you try to advance into Ermor territory you will find very little in the way of supplies.
If Marignon is in the game and more Ermors neighbor than yours, assist them. Send them gold, astral gems, or better yet just make them things like herald lances and send those. Marignon is Ermors best balance. When it comes time for you to take out marignon the holy weapons you sent will have little effect on you.

Pythium works too. Air and astral have some applicable spells, and communion increases priest power too.

I have done very well with all forms of Undead against most of the other races until Marignon  It's a tough battle i have yet to win...once! I'm playing only against them now and am sweating bullets  .I shall be victorious, even if i miss X-MAS  .

I know from playing C'tis (haven't gotten to Ermor yet) that a nice, fat level 5+ antipriest or two can make it very hard to banish undead. And it really only takes a few provinces with an antipriest in each one summoning longdead, backed up with mound kings to collect them, to churn out undead armies in the hundreds. I had no trouble rolling over giants, even with them trying to banish my undead the whole time. In fact, it usefully distracted mages who could be casting much more effective spells.
Still and all, like everything in this game, if you can guess your opponent's strategy, I'm sure there's a counter. Whack the leaders (although try going after a prophet Tomb King. Yow.), or build yourself a POWERFUL priest or two, who can pierce those protective spells, or if you can catch them early enough, grind your foe up in enemies with high defense. Or buy a lot of cheap archers and slingers. They do wonderfully against undead, who have to travel in thick packs and have lousy armor and hp.
There's always something. Unless you're playing the Caelum.
