How do you do a screenshot like that?

In this particular case, I hit the 'Print Screen' key on my keyboard, which copies the screen onto your PC 'clipboard'; then I opened a graphic viewer and hit 'Paste', displaying the screen image on the viewer. Then save the image as a jpeg file or whatever file type you like.
I often use Irfanview as a graphic viewer and for changing file types, resizing, minor edits etc...

Irfanview also has a cool screen capture feature where you set a 'hotkey' for screen prints (Options...Capture/Screenshots) and choose what file type, where to capture the files, and if you want whole screen or just window. Then you can capture a screen shot each time you hit the hot key. Unlike the 'Print Screen' button, which can only put one screenshot on the clipboard.
