Newbie seeks info

I see that enlarging shipboard weapon mounts increases the damage they can do, but I don't see how to build larger weapons mounts. Any hints?

If I want to slow the AI factions down while I learn the game, should I set their difficulty to hard or easy? In other words, should I choose "easy" for me or "hard" for them?
