Is it possible to board a ship with organic tech and analyze it to get it?

Only if your race also has the Organic Manipulation trait; otherwise, no.

No. The option to modify the data files to allow that is possible.

You can board the ship and capture it, yes. Then, you can even use it yourself. But, you can only analyze it (and repair it's special components) if you have the trait required to gain access to the tech area.

Of course, if the ship has useful NON-organic components on it (ie engines, fighter bays) then you can analyse that. YOu just don't get racial trait stuff.
