How the heck does one..
get Winzip to compress folders and not files per se?

My good PF, May I suggest you download WinAce? It's such a good program. I've ditched WinZip as soon as I could.
If you decide to adopt WinAce, I'm willing to mail it to you, or even post it here.

Found out I needed to upgrade to newest Version of winzip. got it and now zipping some of the B5 stuff. Now my problem is that the shrapnel mod forum is choking on the zip file (it's ONLY 17 MB  )...

Try this:
Right click on the folder and click ADD TO ZIP.
See if that works for you.
