Any particular reason why they'd do that - other than having too much money?

Some of those could also be from sites. Firbolg fortress, Jervellan Wall, Crystal citadel...

The AI can do odd things. I've seen some with a strange compulsive desire to build castles or temples everywhere, I don't know why.

There are different AI personalities, n'est pas?
Perhaps the defensive one would be more inclined to build castles.
