I've been told the Devour Soul effect always hits (even if the bite doesn't) and it is irresistible.
GoR him for some extra scripting control.

The soul death effect is tagged as a secondary effect, which means that the bite must hit for it to take effect. Either you are misinformed or there is some special mechanic for the devourer. The effect is irresistible though, like you said. The devourer is not a bad unit, but it is a bit expensive.

try gift of reason on the devourer, equip with pendant of luck and another boosting armor / defence.
with a good bless he is pretty effective.

Isn't there an "always hits" attribute for some secondary effects?
