Caves?

So I've noticed that when I've completely explored a planet (at least it's surface) it only shows that it's 60% complete. I've also heard that there are caves. Do any of the planets in the first 5 sectors have caves? I have been all over the maps and haven't found a cave yet but maybe I don't know what I am looking for. Has anyone else found caves?
