You really need to read the manual...
You give Magic levels to your pretender when you design him: click on "magic", then on the appropriate icon to increase/decrease the magic level.
To see the list of rituals one of your commanders can cast, use the "cast ritual" order (in a province with a lab). To see the list of battle spells he has access to, go to the army setup screen ("t" keyboard shortcut), then click on his "select orders", and select "cast a specific spell".

thinks to phild but the manual is difficult to read to a french!!!
bref,does my pretender can sell gemms to money ?obligatory in labo?why some persons in province winned stay in garnison and cannot be take? there is 55 garnisons in my pretender castle and and i don't know what i have to do? can i take them ?and with my pretender?please help me.

I am French. I can read the manual all right.
If you have trouble understanding the English in the manual, maybe you should give up on this game. It contains page upon page of item descriptions.

Any mage can alchemize (that's the order to use) in a lab. Only Earth and Fire gems can be alchemized into gold; the others can be alchemized to and from Astral pearls, at a rate of 2 for 1.
If you cannot take some of your troops on your commanders, there are basically two possible explanations: either the commander already has all the troops he can command, or the troops are of a type that your commander cannot command. There are 3 types of leadership: normal, magic, and undead. Most commanders have some normal leadership (scouts and spies typically don't), most mages have some magic leadership as well, and it normally takes a Death (or Blood?) mage or undead commander to have undead leadership.

thinks to you PhilD.i begin with ulm ans somebody wrtite to me that Ermor is a little bit easy with undead. but the magic is very important and interesting but difficult for a novice!
bref, in my dominion principal i have seen in recruit army that there is a lot of persons in garnsion 55 or more .can i take them with my pretender or anyelse mage? or they stay in my castle?

[Assuming you are playing Soul Gate or Ashen Empire Ermor]
Most likely, those are undead (the alternative being militia or flagellants from an event). You will need a Commander with Undead leadership to take the garrison to battle.
Also, note that unless you have a commander there, your undead garrison will disolve without a fight when attacked. Ermor's Province Defense is pityful, but even 1 point will provide a single commander and will let your rabble from the dominion effect repel most Scout attacks (or, after a few turns, even a Call of the Wild/Winds).

The magic system is very large, and is difficult to understand when you are just starting. If it is giving you trouble, you were probably better off with Ulm. Magic is less important for Ulm than for the other nations.
