I don't think I can explain that any more clearly than the manual does. (If the downloadable version doesn't include a .pdf of the manual, that's a rather severe oversight on Shrapnel's part.)
Most of the options don't do anything if there's only one human player; the computer players don't do trades. The ones that can be used in solo games are:
"End Turn" - trade unused time for cash, when you have nothing left to do on your turn.
"Eat" - trade excess food for extra time. Set the amount you want to eat with the arrows.
"Done" - go back to the main screen when you're done trading and eating.
