* Defend strategical warp points on the far side, otherwise your ships will end up right next to the enemy ships in combat and take alot of dammage early.
* Use tactical combat mode rather than strategic (the AI is stupid when it comes to combat).
* I STRONGLY second using missiles and backing away from your enemy.
* If one of your enemies are close to you and not too powerfull, wipe out their planetary defenses but not the pop. and the facilities, and leave enough ships at each planet to "defend" it against enemy ships. This way you blockade their planets and thus cut their production of resources. If you do this to enough of his planets and demand his surrender he will budge...sooner or later. And when he does YOU get the remaining worlds. If you don't have enough ships just wipe out the smaller planets (less pop./facilities, not physical size) and just blockade his homeworld(s) and heavy resource producing worlds. Again, try to defend the warppoint into those systems (on the far side ) so you don't have to leave a mult-ship fleet at every planet.
By taking over my enimies in this fasion I have in my current (and previous) game(s) grown MANY times stronger than the remaining enemy empires. It's just too easy to win after you have conquered the first one-two enemies.

If your ships are way outclassed, then try to run in close and ram the enemy. Since the vagaries of SEIV physics do not allow retreats, it isn't even a question of morale or patriotism -- your crews can die in the ramming and possibly inflict grave harm on the enemy, or they can try to fight a hopeless battle and let the enemy wipe them out for free.

One word - Intel. One of my favorite strategies is intel. I research it early and get to level 4 (Puppet Political Parties). That intel operation seems to work every time. Although, sometimes they destroy the colony as soon as you get it, they don't have the resources from that colony either. And I tell you, after you have taken a few of the enemy's planets, they seem to gow down the victory scale fast.
I am currently in a war with the Eee (I hate those guys!)and they had at least a 50% better rating than I did. In fact they were the Mega Evil Empire. I intel'ed them with PPP and Crew Insurrection (as well as counter-intel) and within 25 turns, I had 'em at half of their original score. I had captured (crew ins) at least 12 of their dreadnaughts (analized 'em and gained 4 levels up to Wave Motion Gun II) and 8 of their planets. I quickly converted 2 of their planets into military installations and had decent support well within their territory. They then switched focus and started relocating their fleets toward those bases within their own territory. Cool!
That gave me plenty of time to build up a significant fleet, sent that fleet to one of those bases and I am now "ripping those Eee a new butthole".
I don't know about 3 front wars, but this would definitely weaken one of 'em.

Aim for the Planets! They are the source of resources for you enemy. Preferbly take them with troops. But at the least make sure your opponet loses them

If you have time, pump your stellar manipulation till you get the warp closing thingymaguchi and isolate yourself a little, once you regain your composure, you can open a warp point where ever you want and start the war all over again, in you terms.

which is alot easier than it sounds, since that tech is the at the first level of the stellar manip tree. if you dont mind abusing the AI's inability in that area, I highly recommend it as well.

When my chips are down, I tend to hole up with mines / fighters / sats. Then I build some raider class ships (shield busters along with boarding parties). This gets me some ships for a hasty defense and also gives me all kinds of nice tech. Once I get my tech level up to where I can fight back, I start building an attack fleet to start planet busting and push them back.
