Actually, I'm pretty certain mistform "works" against magic weapons. Or rather a successful attack with a magic weapon will dispell mistform, but it will still be limited to 1 damage. If the odds of an enemy actually getting a successful attack are pretty low, then its still work considering.
On another note, the main purpose of EA SC's are to expand against independent provinces, which rarely come equiped with magic weapons. Indeed, very few nations will have access to magic weapons early in the game. Plus, if you have body ethereal, you certainly have personal luck, and those stack as well.
I'd say your line of thinking is a solid one.
