You can never get more than 200 fatigue from casting one spell.
(So, s4 + 2 boosters, + power of the spheres, light of the northern star gives s8. So then you can cast it, lets say the mage already has 20 + 25 fatigue from casting booster spells. After one mass enslave the mage gets 245 fatigue, which is 45 over 200 so 5 damage).

No.
If you cast it in communion - you get 800 fatigue + penalty from insufficient paths (so you need a BIG communion, or slaves die). Or you cast it by a single druid/illithid/pertender and get just 200 fatigue.

Cool, that does work! I did not know that - for some reason I thought the AI just wouldn't cast a spell that would put you over 200 fatigue. I was wrong!

Yeah, that is true, slaves can get higher than 200 fatigue.
