Tartarians come to mind, so long as you can heal the likely Feeblemind...
Any commander you've Enslaved.
Monsters with exceptionally high movement (there are some that can fly 10 provinces a turn, ex. Vastness... which also reveals another interesting property when GoR'ed) are likely picks.
If you're fighting R'lyeh illithid packs, you might also want to GoR a mindless unit to make a mindless commander for leading additional mindless troops.

Creature with unusual slots. Crossbreeding can produce some interesting things... Grotesgues have three hand slots IIRC. Some of the more rare crossbreeds could be used more effectively if they can use the commander-only Fire Rear.
It doesn't have that many actual uses, but you can always give a 5-star, limping, one-eyed Veteran a chance of leading armies instead of retiring him as an arrow-fodder.

Despite having Gift of Reasoned a vastness before i dont recall any special properties, please remind me (seriously, i wana know).
Tartarians are ok for GoR but with the gems i would rather just make more and hope for a commander. Ettins (what endo may have meant) have 3 arms and 2 heads which is useful, basically any powerful unit that could benefit from items is a good choice (abominations, tarrasques, and iron dragons all come to mind). Wished for units and units that would be far better if empowered are also good choices.

Even if less powerful that other summons cited here, a GoRed Gargoyle is rather cool also, once equipped it's a really nice thug/mini SC.
