Priest level, smiting and magic resistance
If I give my level 5 priest a sword of Justice or other items that boost magic level so that his effective priest level is 7+, will he then have a better chance of penetrating an enemy's magic resistance when smiting? (Or: is boosting priest power above 5 pointless?)

Yes. You can bring up a unit' priestly power up to 9 to get a godlike pope...5+1+!+1+1 Higher, with communion. But I don't know where you're getting that 9 from...
5 (Carmont, Bartholomeus or other national hero)
+1 (prophet)
+1 (Sword of Justice)
+1 (Power of the Spheres?)
+1 (Crystal Shield?)
except I don't know if PotS or Crystal Shield boost priest power (Robe of the Archmagi and Ring of Wizardry do not). But if they did, then you could start at 9 before communion bonuses.

Penetration is calculated by the requirements of the spell.
For every 2 Levels above the Spell's path Requirement you are given 1 MR Penetration.
So Banishment has 1 MR Penetration at Holy 3 and 2 MR Penetration Holy 5.
Smite Demon has 1 MR Penetration at Holy 5.
This works for all spells.

Yes, they work for them.
A holy 5 priest with a Spell Focus has a good chance of banishing some of the upper end undead (like Wailing Ladies, Lictors, etc) with it.
