How mani AI players ias normal?

You find this easily in the "game setup" screen. This is when you create a new game. You select the nation you want to play by by clicking once on that nation so that it reads "human". On the nations you want to have as AI, you click on these twice so that they read "Easy AI", thrice for "Normal AI", and so on.

(You can only change AI strength at the beginning of a new game, never during an ongoing game.)
