I think you could change the pictures in your "<i>SEIV</i>/pictures/races" folder. Rename the one you are using now and substitute a copy of the race you want to be by then renaming it and all files there to the other names. I do not think you can change the race specs, like increasing the mineral mining ability, without starting over in a new game.
