When a unit makes a kill or shoots in a game it will get more experience as it takes part.

Nope - if it uses weapons, hits, or kills it has a
better chance to make the experience gain roll that is done post game (when the various status improvements are shown at the campaign game conclusion).

So in a campaign, once each unit has gone past the 5 kills you want it to make a kill a game, failing that at least shoot at an enemy.

Why would you want it to kill 5 units
per game?. A unit that has passed the 5 kills point is slightly more likely to pass the experience gain roll. A unit with 10 kills gets no extra chance, not unless it went past 5 kills in this game to get to the 10 mark.

Would it be feasible to show somewhere like the roster whether the unit has shot or killed in that game?

It ain't going to happen. Too much programming, testing and documentation change (and probably nil screen real estate either).

An XP earned this game column would be ideal I suppose.

There is no experience gained this game "total", there is an experience gain roll
after game end, and you will see the results if a unit has progressed to a new level (or in some cases, gets demoted) in the experience gain phase at endgame.

Otherwise, is it possible to export a roster to excel or something?

Ain't going to happen. Too much programming and testing etc to justify the feature.
