There was a turreted mortar system available for the Piranha II chassis (and I would imagine now the III, from which the Stryker was derived) and General Dynamics Land Systems proposed an 155mm self-propelled howitzer variant of the Piranha III, but I don't think the US military has seriously investigated either.
On a related note, the first generation of M1129 vehicles, designated as Mortar Carrier Vehicle A, could not even fire the mortar from within the vehicle. While wikipedia suggests that these vehicles were all pre-production prototypes, the two variants appear to be included in the technical manuals. I believe the XM1129 MCV-A was standardized as the M1129, while the XM1129E1 MCV-B was standardized as the M1129A1. Regardless, I haven't seen any indication that the MCV-As saw any combat.
