Jotun giants has both lower defense and attack skills. So the warriors will finish them before getting attrited down to much.
Another problem is routing too soon. Try to increase morale - mix in a few sacred serpents, and cast Sermon of Courage. The elite warrior also has the bite attack, and with higher morale and attack they should do better than the slave warriors - if you have the resources for them.
