Minefield Toggle
What is the command to tell the game to stop marking an area as having a minefield once you've run into one (and the mines are gone) ? Is that documented somewhere?

Main Menu/Controls has lists of what the current hotkey mappings are. (You can remap things by selecting a command on the list and pressing the new key combo that you want to use.)

I don't think there is one for specifically what you are looking for. You can manually tag and untag minefields using the menus/hotkeys. The game will automatically mark a minefield that you encounter but don't clear completely with minesweepers. The game USUALLY automatically unmarks a minefield once it is swept; no game command to control this. In my experience there are rare occasions where the marked minefield doesn't get automatically removed when all the mines are gone. I *think* this occurs when you "clear" a minefield by being hit by the last mine; I *think* if the last mine is swept by a minesweeper, the marked minefield is automatically removed. In any case, there is no command that I know of to control auto clearing of minefields.

I don't think he's asking about toggling the minefield manually. I think he's asking about the game automatically clearing the minefield once you have run into the last mine and not been destroyed; and I don't think there is one.

10-4, I've noticed inconsistent behavior in marking minefields cleared. Thought maybe it was something I was doing/not doing. Maybe I just haven't seen it enough to understand the behavior?!

Yes, to state concisely, (but not backed up by testing): I believe that auto-clearing of minefields will occur when a minefield is swept with minesweeper(s), and not cleared automatically if "cleared" by running into the last mine.
